I’m officially in my 'nduja era. It’s rich, spicy, ridiculously versatile, and right now I’ll put it on just about anything… including Golden Crumpets. Their fluffy, golden interior soaks up all that melty 'nduja butter, while a drizzle of hot honey brings the perfect hit of sweet heat. A nostalgic favourite, upgraded for grown-up tastes. Breakfast, lunch or dinner!
Makes 4
Ingredients
1 tbsp 'nduja (see note)
40g butter, softened
Pinch of salt flakes
4 Golden Crumpets
4 slices tasty cheese
Hot honey, for drizzling
Fresh thyme leaves, for serving
Method
1. Preheat a pizza oven or regular oven to 200°C.
2. In a small bowl, mix together the 'nduja, butter and salt until smooth.
3. Coat the Golden Crumpets with a thick layer of 'nduja butter.
4. Place on a cast iron skillet or baking tray and toast in oven for 2–3 minutes or until starting to crisp.
5. Remove from oven, top with cheese slices and return for a further 2–3 minutes or until cheese is melted, bubbly and golden.
6. Drizzle with hot honey, sprinkle over some thyme leaves and serve while hot.
Note: 'Nduja is a spicy Calabrian spreadable sausage available from butchers and select delis. If you don't have fresh thyme on hand, spritz with Fin. Garlic Rosemary Thyme.
